Why do baking recipes fail when scaling pans or volume cups?

Whenever I double a cake or bread recipe for a family gathering or switch baking pans, the center either sinks or dries out. How do professional home bakers scale ingredients and oven temperatures?

A scooped cup of flour can weigh anywhere from 115g to 155g! Always convert cups to grams using our Grams to Cups Calc (1 US cup all-purpose flour = 125g), and use the Recipe & Pan Scaler above to adjust batter by exact pan surface area (πr²).
